At times if can feel like squash can get so darn fussy.
They are so huge and hard to cut and the outsides practically need an ax to chop through them. They come in all sorts of strange shapes and sizes and you wonder how you are supposed to even get at them, let alone eat them.
This Delicata squash isn't like that at all. It is like a really beautiful zucchini and you can treat it just like that.
I scoop out of the seeds, but the flesh outside is tender and edible and it is just beautiful when roasted.
I cut it into slices and then tossed it in olive oil.
spread it on a pan and sprinkled some no salt Mrs. Dash on it .
bake for 1/2 to 3/4 hour at 375 degrees in your oven.
If you would rather, in a microwave, cook for approximately 20 minutes in a dish with a loose cover of plastic wrap.
