Broccoli and Bow Tie Pasta


There is a lot to be appreciated in a simple recipe with just a few key ingredients and an easy way to put it together.  There might be times when you want to be in the kitchen and great a beautiful meal and spend hours doing it, but other times, you might just want to eat good for you, comforting food that can be put together easily and doesn't cost a lost.  I just adore this recipe for those reasons. 

It is a huge favorite at our house and I love something that can be put together in less than 15 minutes and only gets one pot dirty!


If broccoli isn't one of your family's favorite veggies, try a different bag of frozen veggies - or try one of the mixes that they have so many of.  

Experiment with different shapes of pasta if you can't find broccoli, and remember, you can find whole grain pasta and it is an easy swap towards making whole grains a part of your diet. 


Ingredients

12 oz pasta 
1 lb frozen broccoli florets
3 Tbsp butter 
3 Tbsp grated Parmesan 
Salt to taste 
Pepper to taste 

Directions

Bring a pot of water to a boil, then add the pasta. Boil until the pasta is al dente (7-10 minutes). 

Add the frozen broccoli florets to the boiling pasta water, turn off the heat, and let sit for 1-2 minutes, or until the broccoli is tender-crisp. Drain the pasta and broccoli in a colander.

Transfer the pasta and broccoli back to the pot (with the heat off) or to a bowl and add the butter. Toss until the butter has melted and coated everything. 

Add the Parmesan, salt and freshly cracked pepper then toss to coat again. Taste and adjust seasoning as needed. Serve immediately
