Cantaloupe Salsa / Southwest Salad

When I was growing up my grandpa used to love to eat cantaloupe with a big scoop of vanilla ice cream in the center. I prefer to eat it with a scoop of cottage cheese and some black pepper. Some internet (and family) research revealed that with some plain Greek yogurt and honey was also really a hit!  I am beginning to think there isn't anything this little melon can't do.
Food $ense has an information sheet about cantaloupe where you can learn how to pick out a good one, how to clean it and how to store it for best flavor and use.

We also have some amazing recipes that will help you use it in a way perhaps that is new to you. I am going to try the Southwest Salad because I already have half a jicama leftover from making Spicy Jicama Sticks

Holy Delicious-ness, this stuff is amazing. Start adding your lime and your spice slowly so that you don't make it too hot for yourself, but boy-how-dee, is it ever a combination of flavors!
