We are heading into the last week of living in our house. We have begun to pack the real stuff and there are boxes, rolls of tape and newspaper everywhere. I am feeling the stress of it and the kids now hide when they see me coming for fear I am going to make them pack more boxes and haul them to storage.
We are doing our best to eat things so that we won't have to move them, this means we are coming up with some strange recipes and being a little bit inventive. We had Chicken Parmesan with chicken nuggets on Sunday night, and the night before we had Chinese food, but the lo-mien was half ramen noodles.
My meal planning has really centered around what do I have that I need to use and what isn't going to survive being in storage and how much room is their in the fridge where we are going. Meal planning for 9 people is really exhausting, but it is the only thing that saves my sanity. If dinner time. or lunch time for that matter, rolled around and I didn't know what I was going to feed them, I would go crazy. Not to mention, that I would probably be eaten alive by them - dipped in ranch, of course.
