Homemade 3 Ingredient Fruit Snacks



Who would have thought it was so easy and simple to make homemade fruit snacks.  Not me, that is for sure. I thought these were going to be super hard that I was for sure going to regret even attempting them. It turns out that they are super easy - and really really good. 


I decided to make apricot fruit snacks. Right now at our local farm stands the apricots are at the peak of their season and so they are the most flavorful (and by far the least expensive fruit available.) Plus, nobody at my house seems to like to eat apricots plain. 



Homemade Chewy Fruit Snacks


Ingredients
1 1/2 cups fruit
2 tablespoons honey
1/2 teaspoon vanilla (optional)
2 1/2 tablespoons gelatin (3 Knox packets)



Instructions
In a saucepan over medium heat, heat fruit, honey, and vanilla until fruit has softened and started to release juices.
Turn off heat, pour mixture into a blender and puree (or use an immersion blender), then return to saucepan.


Pour in gelatin slowly, whisking to incorporate. Continue to whisk until the gelatin is completely dissolved and incorporated into the fruit.




Pour mixture into a glass, Pyrex, or silicon pan, and put in the refrigerator to cool for at least an hour to set.
Once set, cut into individual pieces and store in an airtight container.


 If you are going to use a fruit like strawberries or raspberries you are going to end up with seeds in your fruit mixture. You can just leave the seeds in for a little bit of fruit snack crunch or you can use some cheese cloth over a fine strainer to strain the seeds out and just leave you with the fruit puree. ( Just like you would do to make jelly).
