Good For You Greek Salad


I love eating fresh fruits and vegetables when they are in season. They taste the very most like themselves. 

I hope you have had a fresh peach, or tomato or even carrots right from the farm, from a farm stand or a farmer's market or even a friend who gardens.  Most times, they don't even taste like what you get from the store. 

I love peaches so much, but I won't buy them from my grocery store, they don't taste the same as the ones that I grow on my trees. 

If you have space start a garden or a container garden if you just have a patio or deck. 

Tasting food that has only been processed with dirt and sunshine is a real treat and you will love eating food that tastes more flavorful, fresher and more delicious. 


This simple salad combination uses the very best of all the season's produce. Each of the ingredients highlights the others and the dressing doesn't mask any of the flavors but makes them even brighter. 

Ingredients:
3 large ripe tomatoes, chopped
2 cucumbers, peeled and chopped
1 small red onion, chopped
1/4 cup olive oil
4 teaspoons lemon juice
 1 1/2 teaspoons dried oregano
salt and pepper to taste
1 cup crumbled feta cheese
6 black olives, pitted and sliced (use can use Kalamata or Green Olives you have them)

Directions:

In shallow salad bowl, or on serving platter, combine tomatoes, cucumber, and onion. 
Sprinkle with oil, lemon juice, oregano, and salt and pepper to taste. 
Sprinkle feta cheese and olives over salad. Serve.
