Edamame and Chickpea Salad


I haven't liked a salad this much since I made my Marinated Lentil Salad. This salad is full of lean protein in the chickpeas and the edamame. You can add any veggies that you have on hand. 

The dressing is simple ans flavorful. I kept mine in small round containers that I could just grab and eat for lunch or a snack - I'll be honest, I ate one in bed at 10:30 pm on night. 


 It is much better the second day. If you are going to make it for a potluck, I highly recommend that you make it the day before. But that just makes this recipe all the more perfect.
