We have been craving some lighter foods at our house. With all the rich, indulgent foods from the Holidays and family parties - I have been craving lighter foods that have a lot of nutrition in them. Another huge plus about this salad is that it doesn't cost much to make and it has a ton of protein in it. So you can eat it on pita chips or crackers or just by the fork full, like I do.
It is not your mayonnaise heavy traditional tuna salad, but it is my very favorite way to eat tuna salad. The texture of the white beans (great northern or navy) give it a creaminess and the fresh lemon and green onions give it a bright freshness that I just go crazy for.
If making the recipe like this feels to protein rich for you, you can add chopped celery, halved cherry tomatoes, cucumbers, or even mix it up with some chopped romaine lettuce and a bit more lemon and olive oil as a salad dressing. That sounds amazing, I might have to make that as well.
