We like baked chicken at our house. It is easy, and I can feed two kids per chicken breast so it is an inexpensive high quality protein for our family. Plus for some of my kiddos, baked chicken and rice is one of their most favorite dinners.
The only problem I have run into with making baked chicken for our family is that it can turn out kinda dry (or really dry - depending on who you ask) This recipe is a wonderful solution to that. The yogurt and cheese add wonderful flavor and keep the chicken moist and delicious.
4 boneless skinless chicken breasts
1 5 ounce container 0% plain Greek yogurt
1/2 cup freshly grated Parmesan cheese
1 teaspoon seasoning salt
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
Preheat oven to 375 degrees. Spray baking dish with non-stick cooking spray.
Combine yogurt, Parmesan cheese, and seasonings.
Spread over chicken breasts. Bake for 45 minutes, or until chicken is cooked through and topping is browned. Serve immediately.
I covered the chicken with foil for the first half and hour and then removed the foil for the last 15 minutes of cooking time so the cheese mixture could get a nice golden brown.
The taste was amazing and the chicken was moist and delicious. We had some for leftovers and it kept beautifully.
