Sweet Kale Superfood Salad



It is taking me a really long time to start enjoying Kale. I have not really found a way that I actually enjoy it. At least, I think until now. I really actually like this salad - I like it a Lot. 

You know how when you make coleslaw that cabbage has really softened after a few hours - or how when you dress a green salad - you need to eat it immediately or it goes all soggy and limp? I think that is what makes this salad so perfect, the kale gets just soft enough that it isn't like eating sandpaper anymore.  


There is a lot of talk lately about "super foods" and people are trying to get everyone to eat all these foods that grow in the jungle and no one has ever heard of. ( I am looking at YOU chia seeds!)

You can buy this salad in a package - that is where we first tried this salad. I got a bag of it from a friend and then our local store had it on super duper (almost free sale) when there was a shipping mishap.

But you can make it yourself easy peasy!

Seven Super foods that it contains are :
Kale, green cabbage, broccoli, Brussels sprouts, chicory, roasted pumpkin seeds and dried cranberries

You can buy each of the ingredients separately and chop / tear and shred them into a uniform size.

Mix of some Poppy Seed dressing and toss with a bit of it to taste right before you serve it.


The BEST Homemade Poppy Seed Dressing
*This makes a large container of dressing. Store extra in the fridge will keep for several weeks.

Ingredients: 
¾ C. White Vinegar
1½ C. Canola Oil
¾ C. Sugar
2 T. White or Yellow onion(I just eyeball a chunk of onion)
1¼ T. Salt
¾ t. Dry Mustard
1½ T. Poppy Seeds

Instructions
1. Place all ingredients except for the poppy seeds in a blender.
2. Blend on high for at least 1 minute, or until the onion is fully chopped up and emulsified into the dressing. (This is a Really Important step - you don't want huge onion chunks in your dressing) 
3. Add the poppy seeds and pulse a few times until incorporated into the dressing.
4. Refrigerate.
