Spicy Honey Roasted Almonds

Nuts can be a really great snack. They can leave you satisfied and feeling full when you eat them. 

These are great on their own or you can add them to yogurt, top salads with them or add them to trail mixes. 


1 ½ cups raw, unblanched almonds
1 tablespoon sugar
1 ½ tbsp honey
½ tsp ground chipotle chili powder
¼ tsp ground cumin
¼ tsp salt


Line a large baking sheet with parchment paper or a silicone baking sheet. 

Place the almonds in a medium nonstick skillet; cook over medium heat for 6 minutes or until lightly toasted, shaking pan frequently. 

Combine the sugar, chipotle powder, cumin and salt in a 2-cup glass measuring cup. Microwave on HIGH for 30 seconds. 

Add honey mixture to pan, and cook 2 minutes, stirring constantly. 

Arrange almond mixture on prepared baking sheet in a single layer; let stand 10 minutes. Break apart any large pieces that have stuck together.
