Peanut Butter and Jelly Pancakes


Looking for a quick make ahead breakfast? 

The first week of school, my boys were getting up on time, Early even, There was lots of discussion on how much earlier they were going to get up to eat a good breakfast. 

Now-a-days, I have boys flying out the door with hair flying every which way - backpacks hanging open and shoes untied! 


And so I "invented" these adorable little peanut butter and jelly pancake sliders. 

How is that for all the cute food trends all at once. 

You can make these ahead so easily! In fact, I totally recommend that as the way to go. You can make a whole crazy bunch of pancakes - let them cool. The spread peanut butter and jelly on them. Wrap them in plastic wrap and put in the fridge (or freezer). 


When you are ready to eat them, get the out of the freezer and let them defrost for 5 minutes or so ( just enough time to run to the bus stop) unwrap and eat. 

These little buggers solve the "problem" of that pesky bread crusts (if you have that problem)

Plus, they are pretty fun, for breakfast, snacks... and late night eating.  *not that any of us do late night eating *

I use my pancake mix that you can find Here -   that means that this not only contain a great protein but whole grain as well!
